Batman goes French

This is short post to update you on some chefy tongs stuff. I started a new job 2 week ago at a small family owned French restaurant in Bungendore called Le Tres Bon. Bungendore is about 25 minutes drive from home – a very small town which is a tourist honeypot on weekends and holidays and a popular lunch spot for travellers to the coast. I met with the owners in Dec who were incredibly lovely and have given me a fabulous opportunity. I am working with the French chef owner and am learning heaps, getting hands on experience and drowning in classic French dishes including escargot, coq au vin and crème brulee. The restaurant is a nice fit for me, is a very personal restaurant where customers are like family, a good learning environment and the owners are very good to me and supportive while I forge on to finish my school study in June. It’s quite a busy few months ahead so you may not see or hear from me for a while but I will re-appear in June when I get more time after I finish school/TAFE. For now, I’m enjoying the new job and encourage you to come out to Bungendore for lunch or dinner and enjoy some classic French cuisine. The link to the website is below and they also do cooking classes and culinary tours to France and Italy.

On the flying props front, I have had a few more lessons and finally got back in the air after the fires and smoke plagued the country for a few months. So far so good but learning to fly a different plane and get my confidence back is taking some time. I have a great instructor and we are working towards that solo flight and then finishing the back end of my trainingand exams.

TAFE is going well, damn busy with assignments. I’m currently doing Asian appetisers and salads and enjoyed scoffing down won tons, gyoza and pork buns yesterday. I’m also working in the school restaurant to start clocking up hours required to pass the course. I will do about 16 restaurant service periods at school before Easter and then complete the remainder at my work in the coming months. Preparing and serving food for ‘real’ people is scary and I don’t know why given I cook at home and for friends.

So if you want a cheap lunch or dinner, check out the CIT restaurant and come have a good feed and give the front and back of house students a chance to practice their skills.

For those reading from afar, the fires have finally stopped, a hail storm took out thousands of cars in Canberra (not mine) and the rain has started which is just such a beautiful sound to hear. The devastation has been catastrophic and people, businesses and towns have a long road ahead to rebuild. Until next time, stay safe, wash your hands all the time, cough into a tissue and practice good hygiene. And on that, I'll leave you with this last bit of historical fact...
